Kokoro, the sushi and bento fast-casual concept, has further strengthened its pipeline, lining up three further openings, including its first in Scotland.

The 20-strong company, which is led by Eungyu Ko and Rak Kyu Park, will open in Sauciehall Street, Glasgow, later this summer. It has also secured sites in Watford High Street and Uxbridge High Street.

Last year, the company opened its first franchise site in Liverpool’s Church Street.

The group, which launched in 2010, has recently added sites in Maidstone and Milton Keynes.
